Making the wine
After partially removing the stalks and lightly crushing the grapes, they are placed in concrete vats for fermentation.Fermentation lasts 25 days, with precise temperature control and regular pumping over to ensure moderate extraction of the tannins.
Maturation
The wine is then matured for 12 months, mainly in 45 hectolitre oak tuns (70%), with 10% in 400-litre barrels and 25% in vats. The wine is bottled on the estate.
A blend of grape varieties
This wine is a blend of Grenache noir (55%), Mourvèdre (20%), Syrah (20%) and Cinsault (5%).
Specific characteristics
The wine has an alcoholic strength of 14.5% vol, a yield of 35 hectolitres per hectare and comes from vines that are around 50 years old. It is aged in barrels for 12 months and contains sulphites.
