Directly from the wine estate
The brilliance of youth colors them a bright ruby that takes on a dark carmine, black cherry hue with age. Strawberry, blackberry, violet, reseda and rose are part of their spontaneous aromas, while maturity gives them a liquorice, leather and fur bouquet, with gamey and undergrowth accents. On the palate, a great Burgundy is expressed. Full-bodied and powerful, rich, full-bodied, with body and spirit, they assert themselves on a firm structure, tannins that play on velvet while expressing themselves on a very fine gain, without hardness. Pleasant young and to drink on its fruit, it is however and above all a wine of guard, often of great guard, excellent to learn the vintages.
Viticulture:
- 50 year old vines, locality: En Roncevie and Creux Brouillard.
- Working the soil, ridging, digging.
- Reasoned fight against diseases and pests.
- No fertilization for several years.
- Manual leaf removal.
- Green harvest at veraison.
Wine making :
- Limited yields (40 hl).
- Manual harvesting in pierced boxes, sorting on the vine.
- Moderate use of SO2.
- Partly whole grapes and partly 100% destemmed.
- Native yeasts.
- Traditional vatting, with 2 punchings of the cap per day, covered vats.
- Aged in barrels, 25% of which are new.
- No fining or filtration.
- Bottled manually at the estate after 14 months of maturation.
