Chablis 1er Cru Fourchaume 2015 - William Fevre
- The appellation is located on the slopes of the right bank of the Serein, which gives it the most favourable exposure to express its personality. The result is flattering wines, rich and supple, which retain the minerality so characteristic of Chablis.

- AREA SURFACE AREA : 3.63 hectares
- AREA OF THE APPELLATION : 115 hectares
- ORIENTATION OF THE PARCELLES: From south to south-west
- TASTING NOTE : Very aromatic bouquet combining fruit and floral notes. Very elegant palate combining power, breed and roundness.

- SERVICE TEMPERATURE: Between 12°C and 14°C.

- VINIFICATION: Use of the principle of gravity to avoid any pumping over that could be detrimental to the quality of the wine. Pneumatic pressing of short duration (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to preserve enough fine lees to allow the alcoholic and malolactic fermentations to take place naturally. The must is put into French oak barrels (6 years old on average) for 40 to 50% of the cuvée. The balance is vinified in small stainless steel vats.
- AGEING : 13 to 14 months, 5 to 6 months on fine lees in French oak barrels for 40 to 50% of the cuvée. The maturing process ends in small stainless steel vats.
