VINES AND TERROIRS
0.25 ha of vines located on a flat clay-limestone terroir, with an average age of forty years.
VINIFICATION, MATURING
Relatively early manual harvest, sorted, lightly crushed, 100% de-stemmed, transfered into vats using gravity. Vinification in small truncated cone-shaped wooden vats (18 hectolitres), native yeasts, vatting 18 to 25 days, moderate pigeage.
Maturing in cold cellars, 30 to 50% new barrels (origin of the wood: Allier, Nièvre). Maturing on lees (16 to 18 months), one racking: 1 month before bottling.
No filtration, no fining.
