PRESENTATION : Pinot Noir is one of the pillars of the Champagne House. Champagne owes everything to Pinot Noir, its aromatic palette that fascinated so much in the 19th century and its deep colour that made it the blond wine of the great poets. It is not by chance that this pressing and white vinification of Pinot Noir on the porous chalk of the Campanien has forever marked the history of wine and mankind. Pinot Noir alone illustrates the incomparable finesse of northern wines, whether it is vinified as a Burgundy red or a Champagne white. The equation "cool climate + soft limestone" gives it its most perfect expression and makes it one of the rarest grape varieties. This duality between power and fragility has become the quality marker that every great wine is looking for: ça pinote! Coming from Burgundy, it is at the origin of the qualitative birth of Champagne wines in the 17th century, when the winegrowers learned how to make a great white wine from it. We were marked by the "little ice age" (1650-1850), an episode so cold in Champagne that we no longer knew how to make good white wine from white grapes, nor good red wine from black grapes. This is how the genius of the Champagne winegrowers emerged, who, overcoming this climatic accident, revolutionised pressing and vinification by learning how to make a great "white wine from black grapes".
