TERROIR AND GRAPE VARIETIES
The large 100 hectare vineyard on the left bank of Chasse Spleen is planted with 52% Cabernet Sauvignon, 39% Merlot, 5% Petit Verdot and 4% Cabernet Franc. This shows a major change from what was planted with an increase in Merlot and a decrease in Cabernet Sauvignon. The Cabernet Franc seems to come and go here, as it has been removed and subsequently replanted.
The vines are on average 30 years old. The terroir is gravelly, with clay and limestone soil. However, this varies as they have parcels in several different vineyards spread across the various communes of the appellation. The vineyard is planted at a density of 8,000 to 10,000 vines per hectare.
VINIFICATION
The Chasse Spleen red wine is vinified in a combination of stainless steel and wooden vats. Malolactic fermentation takes place in vats. Chasse Spleen is aged in 40% new French oak barrels for 12-15 months before bottling.
