TERROIR
- The Premier Cru Clos du Roi is composed of 4 contiguous plots. The oldest vines were planted in 1970 and the youngest in 2002.
- Total surface area: 3.089 hectares
- Climate & Soil: South/South-West facing hillside, its relief is concave with more chalky ends. The soil is dark brown.
VINIFICATION
The grapes are harvested by hand to ensure quality. Then the harvest is sorted by hand and partially or 100% de-stemmed depending on the vintage. After filling the vat, a pre-fermentation cold maceration of 4 to 6 days at 10°C helps us to extract the colour from the skins. Natural fermentation then starts at 24°C and rises to 31°C in its final phase. The extraction of the phonetic compounds is done with the help of pigeage, the intensity and number of which vary according to the quality of the grapes and therefore the vintage. The post-fermentation maceration helps us to soften the tannins. At devatting, free-run wine and press wine are carefully separated and aged separately. The wine is aged for 15 months in 100% oak barrels, 25% of which are new.
TASTING NOTES
Very beautiful dark garnet colour with purple hues. Intense and empyreumatic nose with notes of sweet spices such as cinnamon and nutmeg. Notes of red fruit and fresh grass. Very good volume in the mouth with notes of red fruits. Notes of cinnamon and nutmeg. The tannins are very silky.
GASTRONOMY
It is a perfect accompaniment to cooked meats such as: a peppered rib of beef, a rib-eye steak, a roast shoulder of lamb, a rack of pork as well as cheeses such as Tomme des Bauges.
To be enjoyed now at an ideal temperature of 13-14°C
THE ART OF TASTING
We often forget that it is not enough to have good wines in our cellar, but that we must also know how to serve them. Temperature is an essential element, around 12° for whites and 15° for reds, and without a good tasting glass that will amplify the aromas of the wine, you are sure to diminish your pleasure. A good glass gives the wine a large surface area to breathe and a narrower neck, which allows the nose to better grasp the richness and complexity of the great wine.
