Tasted by Joe Czerwinski in 2018: "Savory notes of clove and leather nuance the rich fruit of the 2016 Chateauneuf du Pape. It's full-bodied, creamy, lush, plump with red berries and stone fruit and remains fresh and fruity throughout the long finish. It should drink well for a decade or more."
• Grape Varieties: 50% Grenache, 25% Syrah, 10% Cinsault, 15% Mourvèdre
• Yield: 32 hl/hectare.
• Harvest : Hand picked.
• Vinification and ageing : After a manual selection of the best bunches on a sorting table, the grapes are crushed and de-stemmed and fall by gravity into our concrete vats. Long macerations with gentle extractions enable us to obtain the powerful and velvety tannins that are characteristic of our wines. About 25% of the wine is aged in barrels and demi-muids for 14 months.
• Tasting notes: Nose, bouquet of garrigue, cistus flower, blackcurrant buds, all fresh and balanced on the palate, with aromas of cocoa and cherry, with a long finish of liquorice.
• Food and wine pairing : In its youth, this vintage is perfect to accompany a shoulder of lamb slowly roasted in the oven, a roast pigeon with ceps, and from its fifth year, a stew, a Provencal stew, all game and many cheeses.
• Cellaring potential: Drink now until 2030.
