Technical details : 

Vineyard: Parcels located on a clay-limestone plateau, cultivated organically (AB) and biodynamically (Demeter and Biodyvin certifications).

Average age of vines: 30 years.

Production: 11,000 bottles bottled on 31 July 2022.

Characteristics: Total SO₂: 44 mg/L, Alcohol: 13°, pH: 3.45.

Blend: 70% merlot, 30% cabernet franc.

Harvest: Hand-picked from 27 to 28 September.

Vinification: Whole berries are vatted by gravity in cement vats, followed by pre-fermentation cold maceration under inert gas. Natural fermentation at low temperature (maximum 25°C) with gentle, gradual extraction.

Tasting: To be enjoyed between 16 and 18°C. Decanting for one hour is recommended to reveal the purity of its aromas in its youth.

Ageing: 9 months on fine lees in uncoated cement vats. Not fined.
