Cornas 2017 Granit 30 - Vincent Paris
Comes from 3 ha of young vines, 15 years old on average, located on granite slopes with a 30% slope.
Grape variety : 100% Syrah.
Yield: 36 hl/ha.
A Cornas with an affordable character in its early years with notes of black fruits and spices and a potential of 15 years of ageing.
Production: 15 000 bottles.
Vinification
The harvest is 100% destemmed. It starts with a cold maceration (12°C) for one week, then fermentation takes place naturally (no yeasting). Temperatures are regulated during the 21 days of vinification. Morning and evening the vats are pumped over and are saturated with CO2.
Ageing
The wine first spent 3 months in vats and then one year in oak barrels aged from 2 to 8 years. The malo is made in barrels. The cellar is air-conditioned at 15°C. The wine is bottled at the beginning of December with a light fining but no filtration.
Tasting
Very deep red colour, nose with notes of black fruits and spices, fruity, spicy, peppery mouth, with coated tannins and a nice length. To be enjoyed with red meats. Can be drunk immediately after bottling, but can also be kept for more than 10 years.
