Cuvée : Comes from young vines located in the commune of Ardoix, on the heights of Sarras, 30 km north of Cornas.
Production: 7 to 8000 bottles per year.
Vinification: The harvest is 100% destemmed. After a few days of cold maceration (12°C) the fermentation starts naturally. The vats are pumped over morning and evening with carbon dioxide saturation. The vinification lasts 3 weeks.
Maturing: 3 months in vats, then 9 months in 2 to 8 year old barrels (no new barrels to preserve the flavours of the terroir).
Tasting: The altitude, the youth of the vines and the working methods give a charming Saint Joseph, full of fruit, to be drunk in its youth.
Ageing : The winemaker likes to drink this wine young, on the fruit and freshness, but it can also be kept for about 10 years.
