Tasted by Joe Czerwinski on January 20, 2022: "From a 1.5 hectare parcel of vines planted in 1945 (by Verset), the 2020 Cornas la Sabarotte is maturing in 50% new and 50% second-hand barrels. Notes of violets and purple raspberries appear on the nose, while the palate is concentrated, rich and velvety, leading to a long tannic finish. It will need some time in the cellar but should be an outstanding drink by 2030.
- 100% Syrah
- Terroir: Granitic arena, very poor soil where the rocks outcrop. Very filtering soil.
- Location : Situated on the right bank of the Rhône, not far from Valence, the commune of Cornas is a "Grand Terroir". Exceptional micro-climate, granite arena, old vines are superb assets for making great wines.
- Production: South-East facing slopes, from very old vines (planted in 1947). About 5,000 bottles a year.
- Vinification : Recent vatting house. Hand-picked, destemmed, crushed. Vinification in closed, stainless steel, thermo-regulated vats. Controlled vinification temperature 30-32°C, maximum colour extraction. Numerous and regular reassemblies. Vatting, maceration from 3 weeks to 1 month. Vinification of the "vin de garde" type.
- Ageing: 70% new barrels and 30% barrels of 1 wine. Malolactic fermentation in new barrels. Numerous and regular rackings. Bottled after 18 months of ageing.
