- The Château Dassault vineyards extend over approximately 25 hectares and are planted mainly with Merlot grapes, with a small proportion of Cabernet Franc and Cabernet Sauvignon. These grape varieties are typical of the Saint-Émilion region and contribute to the richness and complexity of the wines produced.
- The grapes are harvested by hand and carefully sorted before vinification. The wine is aged in French oak barrels for a period ranging from 18 to 24 months, which gives it subtle aromas of vanilla and spices, as well as a balanced tannic structure.
