Triple Zéro Rosé - La Taille aux Loups - JP et Jacky Blot
The Triple Zero Rosé cuvée is the vibrant and colorful expression of Jacky Blot's uncompromising philosophy. The concept remains unchanged and of absolute purity: zero chaptalization, zero dosage, and zero dosage. The major difference lies in the grape variety, as Chenin Blanc gives way to Gamay (often complemented by a touch of Cabernet Franc or Grolleau, depending on the vintage), vinified using traditional methods to offer sparkling wines of dazzling freshness, without any added sweetness.
Visually adorned with a very elegant salmon or pale pink hue, this cuvée immediately captivates with its luscious and ethereal aromatic profile. The nose exudes crisp aromas of small red fruits (wild strawberry, raspberry) and pomegranate, enhanced by subtle floral notes. On the palate, the attack is lively and dynamic, carried by exceptionally fine bubbles, while the finish is remarkably crisp, lingering with a refreshing, saline minerality.
Far from the heavy or overly sweet rosés of the past, this Triple Zero Rosé excels in its versatility and straightforwardness. Perfect for livening up a summer aperitif, it also pairs beautifully with light, fresh dishes: salmon tartare, shrimp spring rolls, fine charcuterie, or lightly sweetened red fruit desserts. Serve it well chilled, around 8 to 10°C, to fully appreciate its masterful balance of richness and tension.
