Sylvain Pataille's Marsannay Blanc “Champ Salomon” is a rare and precious cuvée from one of the Côte de Nuits' most respected winemakers. From a terroir at the southern edge of the village of Marsannay, this white wine is made from Chardonnay planted on clay-limestone soils rich in marl, giving the wine mineral tension and depth.True to Sylvain Pataille's philosophy, the work in the vineyard is entirely organic (not certified), with great precision in vinification to express the pure character of the terroir.Champ Salomon” stands out for its freshness, with notes of ripe citrus fruit, white flowers and a touch of chalk, underpinned by energy and a saline finish.

This blanc de garde surprises with its balance between aromatic richness and straightforwardness.Aging, often long (up to 18 months) and carried out in old barrels so as not to mark the wine, adds complexity without weighing down the palate.This is a gastronomic wine, perfect with grilled fish, creamy poultry or mature Burgundian cheeses.Champ Salomon” testifies to the ability of Marsannay's whites to rival those of Meursault or Puligny, while retaining their own identity, marked by freshness and purity.
