The Cabassaou Cuvée (Cabassaou is a parcel wine) comes from a terroir of small restanques, below the Tourtine river, sheltered from the Mistral wind. The vines benefit from a very hot microclimate, aerated by thermal winds. They give a dense, tight wine, typical of Mourvèdre, with an exceptional ageing potential.
COMPOSITION
Mourvèdre (92 to 94%), with Syrah and a little Cinsault.
Average age of the vines : 60 years old minimum
VINIFICATION
Grapes are sorted in the vineyard and in the cellar; destemmed, crushed and put in the cellar for 3 to 4 weeks of fermentation thanks to indigenous yeasts.
BREEDING
In casks 18 months minimum before bottling.
Conservation: 10 years or more (the time to let the wine blossom).
