The 2023 vintage at Domaine Fabien Coche:

"This vintage marks an important year, as it is the first certified organic wine. The climatic conditions allowed for beautiful grape ripeness while preserving freshness, resulting in precise, balanced, and elegant wines. The whites are distinguished by their tension, aromatic purity, and typical minerality, with notes of lemon, almond, and hazelnut. The reds display beautiful finesse, expressive fruit, and a supple structure. Overall, 2023 promises to be a harmonious and promising vintage, combining accessibility and good aging potential."

TECHNICAL DATA

• The Saint Romain ? A little-known Burgundy appellation, but coveted by lovers of great French wines. This Burgundy is however equal to more than one! It is a racy, straight and precise wine.
• Grape variety : 100% Chardonnay
• Vineyard management : Organic viticulture not claimed.
• Ageing : 11 months on lees, with 20% new wood.
• Peak : 2027-2031
• Food pairing : Shellfish / fatty fish : salmon papillotes, Tahitian salad (white tuna, yellowfin tuna) / cheese platter
