Tasted by William Kelley in 2021: "The 2018 Gevrey-Chambertin 1er Cru Combe Aux Moines unfolds in the glass with youthful, reserved aromas of red and black berries, raw cocoa, sweet earth and subtle spice nuances. It is quite powerful, bright and lively, with powdery tannins, a tightly wound core and good balancing acidity. This is an elegant, rather closed wine (still game in a vintage that tends to produce big wines, and I expect it to evolve with grace..."
CHARACTERISTIC OF THE VINTAGE LA COMBES AUX MOINES
During the construction of the castle of Gevrey-Chambertin, the monks of Cluny, after a hard day's work, would go to the combe to collect themselves. The soil of the Combes aux Moines plot is the same as for "Les Cazetiers" but it is a little higher. It is a great terroir.

VINIFICATION & MATURATION
The grapes are cut and sorted by hand. The proportions of de-stemming and whole grapes vary according to each vintage. A daily punching of the cap is done to extract color, tannins and aromas from the grapes. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is drained by gravity while a slow and gentle pressing of the marc allows to obtain a press wine of great purity. For 16 months, our wines are aged in French oak barrels (40 to 50% of which are new and 50 to 60% of which are two-wine barrels) in our cellars with a natural and constant hygrometry and temperature. These barrels are selected for the fineness of their grain and their moderate toasting.
TASTING
The color is intense ruby. Very pleasant, the nose expresses aromas of fresh red fruits and spices accompanied by delicate woody and smoky notes. The mouth is round and persistent, with fruity and woody flavors. Elegant, this wine has silky tannins and a racy and persistent finish.
