• Vineyard: Plot selection of 50 year old vines, with low yields. Organic farming. The soils are ploughed and the grapes are harvested by hand and sorted on the plot.
• Vinification & Maturing : Pneumatic pressing of whole bunches with selection of the juice. Light cold settling. Fermentation with indigenous yeasts. Aged for 24 months on lees, in underground tanks.
• Food & wine pairing: Grilled fish, white meat and exotic cuisine.
• Description: South of Nantes, Clisson is the most beautiful village in Muscadet, Breton and Italian, rock and romantic. Made from old vines on granite, harvested by hand, 2 years of maturing on lees give it a smooth texture, smoky, exotic notes, candied citrus and sweet spices. A wine for ageing and gastronomy.
