Great Burgundy wine from the estate
- Made from vines that are more than 40 years old, this is a wine of fine structure, with more concentrated aromas and a very long finish.
- Soil: Limestone marl (Kimmeridgian) Press: Pneumatic Bücher
- Grape variety: Chardonnay Age of the vines: Over 40 years old
- Vinification: After pressing, the must (juice) is taken to a stainless steel tank for settling. This is a natural settling by gravity (no enzyme is added). It lasts between 12 and 24 hours. Then comes the alcoholic fermentation* and the malolactic fermentation* which are done under temperature control. Maturing lasts 12 months.
- Characteristics: With green and yellow reflections characteristic of this A.O.C., it is an abundant and generous wine. Fat, ample, persistent, its aromas and flavour develop quite quickly. This wine should be drunk young. Chablis Vieilles vignes has a superior structure, is more concentrated, with greater length than Chablis.
- Aging potential: 5-15 years depending on storage location.
- Temperature: Between 12˚C and 13˚C.
- Food pairing: Seafood platter.
- Meat dish: Andouillette AAAAA and Potato.
