Tasted by William Kelley on January 14, 2021: "Faiveley's 2019 Gevrey-Chambertin 1er Cru Les Cazetiers is indeed very promising, blending smoky berry and plum aromas with hints of rosehip, orange peel, musk and spice. Layered and multi-dimensional, it is concentrated and vibrant, with velvety tannins, lively acids and a long, perfumed finish."
CHARACTERISTIC OF THE CUVÉE LES CAZETIERS
The word "Cazetier" may come from "Castel", the plot of land above the Château de Gevrey. It is one of the rare "Têtes de Cuvée" not reclassified as Grand Cru in the 1930s. With the "Lavaux-Saint-Jacques" and the "Clos Saint-Jacques", this climat is considered as one of the 3 best Premiers Crus of Gevrey. The Domaine owns half of the appellation since 2013.

VINIFICATION & MATURING
The grapes are cut and sorted by hand. The proportions of de-stemming and whole grapes vary according to each vintage. A daily punching of the cap is done to extract color, tannins and aromas from the grapes. After 19 days of vatting, the alcoholic fermentation is completed. The free-run wine is drained by gravity while a slow and gentle pressing of the marc allows to obtain a press wine of great purity. For 16 months, our wines are aged in French oak barrels (40 to 50% of which are new and 50 to 60% of which are two-wine barrels) in our cellars with a natural and constant hygrometry and temperature. These barrels are selected for the fineness of their grain and their moderate toasting.
TASTING
The color is deep ruby. The nose is intense and complex: aromas of red fruits are mixed with toasted notes and roasting. The mouth is ample and generous, the matter is firm with well present tannins. This powerful wine has a silky structure and a magnificent persistence.
