Viticulture: Cordon de Royat pruning (to obtain smaller grapes). Green pruning in May and August. No fertiliser has been used for 10 years, but organic compost-based soil improvers are used. Grass is planted in the middle of the rows, plus the soil is worked under the vines. Low yield. High trellising (1.4 metres) for greater leaf surface area. The entire estate is treated with low doses of natural products, sulphur or copper, or with integrated pest management (products that respect the existing fauna and are only applied when necessary). The soil is ploughed about 4 times a year.
-
Vinification:Hand-picked in bins or crates. The grapes are sorted and 30% de-stemmed, with 70% whole grapes. Fermentation and maceration for approximately 20 days. Pigeage and remontage are carried out twice a day. Littleaptalisation. The wine is placed in barrels (Vosges and Allier, 20% new and 1 or 2 year old barrels).
-
Wine ageing: The cellar is cold, which means that the wines develop very slowly. MLF in barrels. Racked in October (the wines are pushed through with compressed air, so they are never pumped). The wines are not fined. Bottled (by gravity) after 23 months of ageing.
