By Luis Gutiérrez in 2019: "Even if I use the character of Burgundy whites as a shortcut to understand the wines of the Jura, even though I have no more information on the climatic conditions of the year, it is important to know that 2016 and 2017 are very different in the two regions : Burgundy suffered from heavy frost in 2016, and the Jura experienced the same in 2017. Thus, the Chardonnay 2016 Les Chamois du Paradis, which I tasted as a hypothetical blend of different casks, has little to do with the concentrated whites of Burgundy of that year, often with exotic and tropical notes given the great maturity and concentration of a very low yield. But after a long ageing, this wine has a developed nose and is very tasty, almost salty, classy and balanced but not lacking in concentration. It comes from a vineyard planted in 1963 on Bajocian soils".
