- Geographical origin

In the heart of the Faugères appellation, the vineyard extends over a little over 20 hectares, on the last

foothills of the Cevennes overlooking the village of Laurens. The vineyards, ideally located at an altitude

of 180 meters, are 30 to 60 years old and naturally give small yields.

- Grape varieties

Grenache gris 100% : the vines are 50 years old and more.

- Soil

The soils are dominated by the sandstone schists of Laurens-Cabrières, neighbors of those of the Monts du

Faugérois. These are soils with a fragile structure, with an acid tendency, sometimes difficult but which, associated with

adapted driving systems, allow a good balance of the vines.

- Pruning and yield

Short pruning in Cordon de Royat leading to very low yields of 30 hl/ha.

- Vinification

Hand-picking of ripe grapes on August 31 and September 1. Direct pressing and temperature control. Vinification partly in stainless steel vats and partly in new 225-litre barrels, regular stirring of the lees, maturing on lees for 6 months. We have produced 630 bottles of this cuvée.

- Tasting

Extremely rare white settles in classicism: the dress is shimmering in the glass. The nose must open out after opening to discover its complexity: curry, toasted bread, fresh butter respond harmoniously. Ample and rich on the palate. We like to converse with this wine.

This is the ideal wine for sushi and jellied rabbit terrines!

- Some information about the grape variety Grenache Gris

It is a bit the revelation of the grape varieties vinified in white around the Mediterranean. It has consistency, freshness and elegance. To the color of its berries, its aspect is very close to of that of his big brother, the Grenache Noir. However, its more fragile berries are necessary for the vine. constant care to aerate the bunches and reach the desired maturity.
