Comment by William Kelley on April 30, 2019: "The latest edition of Larmandier-Bernier's NV Extra Brut Rosé de Saignée is simply breathtaking, bursting out of the glass with scents of minty red apples, rose petals and blood orange. On the palate, it is medium to full-bodied, pure and elegant, with a concentrated core of vibrant fruit, a very fine mousse and a long, beautifully perfumed finish. The combination of delicacy and intensity of this wine makes it one of the most exciting rosé wines in all of Champagne. This cuvée comes from the oldest vines of the domaine in Vertus and is disgorged with a dosage of three grams per litre". (96/100)
ORIGIN
This cuvée comes from Pinots Noirs picked in Vertus and Pinots Gris planted in the same old vines. It is obtained by macerating the berries for a few days, a technique not often used in Champagne.

BREEDING
This technique is rarely used in Champagne: the Pinot grapes are selected on a sorting table, partially destemmed and then macerated for 2 to 3 days. Then comes the natural alcoholic fermentation (indigenous yeasts) in vats and concrete eggs, the malolactic fermentation, then the ageing on lees for almost a year. The bottling takes place at the end of July. After ageing for at least 2 more years in the cellars, disgorging is carried out 6 months before marketing with a discreet dosage of 3 g/L.

This Champagne Rosé is perfect as an aperitif as well as with tuna tartar or delicate meats.
