This parcel of Chardonnay has been vinified separately since 1995. It is the place called Les Barillers located in the middle of the hillside in Vertus. This terroir is very special, delicate, salty and at the same time very complex. The balance is there, no need to blend!

BREEDING
The grapes are gently pressed and the juice very lightly settled and then directly put into barrels. The natural alcoholic fermentation (indigenous yeasts) and malolactic fermentation start spontaneously in the barrels and Stockinger tuns. The wines are matured on natural lees for the first year without filtration or fining, and are bottled at the end of July without blending with other years - it is a vintage - and without blending with other terroirs - it is a plot. The bottles are taken down into the coolness of the cellars where the second fermentation and ageing on slats take place quietly for at least 5 more years. Each bottle is manually disgorged 6 months before marketing. This wine is not dosed (no sugar added) to respect its purity to the end.

Drink now or keep for 5 to 10 years.
FOOD & CHAMPAGNE PAIRING
Ideal champagne to start the meal, its purity accompanies the oysters with delicacy. It goes very well with truffles.
