Grape variety : Chenin / dry white
Tasting notes : This beautiful wine opens with a clear, elegant, pure and fresh bouquet, wonderfully floral as well as intensely aromatic of ripe and elegant fruits and spicy schist aromas. On the palate, this is a beautifully fruity yet elegant and seriously structured Chenin whose fruit reminds me of elderflower, ginger, apple blossom and tonic water as well as iced tea, orange zest and crushed rocks. The wine is very well balanced and round and reveals a tight, lasting finish with fairly fine tannins. Just a nice accessible Savennières from young vines.
Presentation : The most famous dry Chenin of Anjou, right bank of the Loire. Plot of land planted in 2009, on ochre talcose schist alteration. On a gentle slope facing south, in the commune of Savennières, with a view of the Loire. It deserves its name! Work with the horse.
Vinification and Maturing Direct pressing, static settling for one night at cellar temperature, toasting in Direct pressing, static settling overnight at cellar temperature, slow fermentation in barrels at the start of fermentation (natural flotation that uses the co2 of the must), spontaneous malolactic fermentation, maturation in barrels after racking and blending of the cuvée until bottling.
