WINE MAKING
To produce the wine of Château Marquis de Terme, vinification takes place in large cement vats ranging in size from 80 hectolitres to 250 hectolitres. Malolactic fermentation takes place in vats.
The Château Marquis de Terme wine is aged in a combination of 33-50% new French oak barrels and a small number of 600 litre concrete Nomblot egg-shaped vats for an average of 18 months. Nomblot eggs, which are used for an average of 8% of production, have become popular due to their use in the Rhône Valley by Michel Chapoutier.
