More about the estate:
Nicolas Perrault, one of the best producers in the southern Côte de Beaune, stopped using herbicides in 2009 and minimized vineyard treatments. In the cellar, he aspires to tame the stereotypical rusticity of Santenay and Maranges - a quality that he and I believe is due more to vineyard and winemaking choices than to anything inherent in the terroirs of these unjustly overlooked villages. Perrault observes that the higher altitude of Maranges means it is important to wait for full ripeness, and he has increased the height of his trellis and avoided hedges in an effort to achieve more complete phenolic ripeness.
At harvest time, Perrault is careful to handle his fruit gently, avoiding unnecessary crushing. He has been experimenting with whole cluster winemaking since 2005, and since the 2018 vintage, he has consistently used at least 30% whole clusters. He has also found that his wines respond well to extended aging in judiciously selected barrels of Trémeaux, Chassin and Rousseau. All the wines presented here are, once again, highly recommended.
