ORIGIN OF THE VILLAGE
Fixin and Fixey have formed a single commune since the imperial decree of 1860. The village owes its fame to the "Réveil de Napoléon" located in the magnificent Noisot Park. This bronze monument depicting the resurrection of the Emperor Napoleon was created by the great Dijon sculptor François Rude and his friend Noisot, a veteran of the Empire's campaigns. Fixin is one of the most beautiful villages of the Côte. The top of the hillsides of Fixey and Fixin is now completely bare. At the point where the cultivation of vines ceases, arid wasteland begins. Trees can only be found in the valley of Fixin, where there is a wood of beautiful vegetation which covers the entire north-facing slope.
ORIGIN OF THE PLOTS
The commune of Fixin is sheltered from the excesses of the Burgundian climate: it enjoys such a favourable mesoclimate that the oldest winegrowers can only remember one devastating hailstorm. The localities of our village appellations in the Fixin commune are "Aux Crais", "Petits Crais" (cadastre of 1828) and "en Crechelin". The toponym "crai" (stony ground) in the masculine form designates a cultivated area whose subsoil, formed by a cluster of rolled pebbles on a clay layer, is the product of the alluvial deposits that filled the entire Saône valley during the Ice Age. The vine thrives in this soil when the "crai" is covered by a fairly thick layer of topsoil.
CHARACTER OF THE WINES
Fixin is a delicately coloured wine, which surprises by its structure, which is mostly tannic, and is thus characterised more by robustness than by finesse. With good acidity, it has a solidity and a certain substance that places it in the category of medium-age wines. When young, its aromas are animal, even wild, fur, musk. It is a full-bodied wine with a bouquet that develops with age.
STORAGE AND SERVICE
Fixin is a classic of Burgundy: a regular and slow evolution, due to its tannic note, makes it a wine that you can hope to drink around 4 to 6 years of age for the softer years and keep up to 8 years for the great vintages. You can accompany it with traditional Burgundian gastronomy: coq au vin, daube, boeuf bourguignon, civet for the older wines, and classic cheeses.
