Givry 1er cru Blanc En Veau 2019 - Domaine Joblot
This cuvée is the result of blending our plot of Servoisine with the old vines of Veau. We wanted to bring together vines of the same age in order to reveal all their quintessence.
Exposure: South / East
Age of the vine: 15 years
Maturing: 1 year 50% new barrels and 50% barrels / 1 wine on average depending on the year. Light filtration.
Every year:
- Disbudding and green harvest.
- Hand picked.
- Sorting in the vineyard.
- Pressing of whole bunches.
- Native yeasts.
- Start of fermentation in vats then transfer to barrels.
