Mercurey 1er Cru Les Veleys white 2019 - François Raquillet
This cuvée produces a wine that is wider in the mouth and opens quickly with floral notes. Although supple, the wine has flesh without ever being heavy. Ample, rich, it is easy to drink and keeps a nice balance between acidity and structure.

MEDIUM AGE: 65 years old
Vine pruned in simple guyot. The vine self-regulates with age. The soil is cultivated mechanically with several ploughings per year. The vine is de-budded to clear the environment and obtain an optimal sanitary state of the grapes. A leaf thinning of the vine is carried out, this work represents a solution. alternative to no longer use anti-botrytis. The grapes are hand picked and put in crates. The work of the vine is in conventional reasoned fight. After pneumatic pressing of the whole grapes, the musts are pressed by hand. are debottlenecked. The alcoholic fermentation is done in 400l barrels, 1/3 of which are renewed every year. After one year of maturing on fine lees in large oak barrels. containers in order to preserve minerality, finesse and elegance, the barrels are assembled. The wine is lightly filtered then bottled after 15 months of ageing (12 months in casks and 3 months in vats). To consume with a meal, fish, seafood. Go to 4/7 years of custody. To taste around 14° on poultry, white meats.
