In the terroir of Meursault, certain parcels classified as village appellation are located on marly soil identical to the Grand Cru Corton-Charlemagne (only the topography and altitude change). These parcels are of very high quality and deserve to be vinified separately. This is the case for the wines from the Clous terroir, whose name, which may not seem very flattering, is actually a distortion of the word "Clos". Domaine Bouchard Père & Fils has 8.64 hectares on this site, almost half of the total surface.
TASTING NOTE: Intense bouquet of fruit and flowers with a touch of minerality. Rich and subtle, with a spring in its step that gives it perfect balance. Good ageing potential.
FOOD & WINE Pairings : Fish in sauce.
TEMPERATURE : Between 12°C and 14°C
AGEING POTENTIAL : 5 years and more
HARVESTING : By hand, in small boxes of 13 kg. Careful manual sorting of each bunch.
VINIFICATION: Pressing is done in two phases: evacuation of the first juices, then pressing in two-hour cycles.
AGEING: 8 to 10 months in French oak barrels, with up to 10% new barrels depending on the vintage, then 2 to 3 months in stainless steel tanks.
AGEING: This wine benefits from the optimal environmental conditions of the Bastions cellars of the old Château de Beaune.
