- Tasted by Neal Martin in 2017 : "From a 0.75 hectare parcel of 65-year-old vines, the 2016 Volnay 1er Cru Clos des Santenots was not destemmed as the lower part of the parcel was affected by frost. It has a fragrant, very floral bouquet. The palate has fine tannins, nice acidity, very harmonious with a balanced, mineral finish. Superb.
GRAPE VARIETY & AREA
Grape variety: 100% Pinot Noir with white juice on a plot of 1.19 hectares.
TERROIR
Located in the heart of the Santenots du Milieu, on a brown, manganese-rich soil, resting on a hard, rounded limestone of the pierced stone type. Sloping soil: perfect natural drainage. Full eastern exposure at mid-slope.
VINIFICATION & MATURATION
The grapes are harvested by hand, then sorted and completely destemmed. Vatting lasted 20 days at controlled temperature in open wooden vats. The winemakers punch down the cap twice a day during the active phase of the alcoholic fermentation. Malolactic fermentation is 100% complete. 100% of the wine is aged in oak barrels.
Duration of maturation: 18 months.
