VINIFICATION
Hand picked, 25kg crates, grapes sorted, destemmed, not crushed, and transfered into vats using gravity. Vinification in truncated cone-shaped wooden vats of small volume (25 hectolitres), native yeasts, vatting for 18 to 25 days, moderate punching.
MATURING / BOTTLING
Maturing in cold cellar, 50 to 80% new barrels, on lees (16 to 18 months). Racking one month before bottling. No filtration, no fining
