- Grape Variety : Chardonnay
- Location : In the northern part of Fuissé and on the edge of the Hameau de Pouilly, the "Tournant de Pouilly" is a vineyard of one hectare in two plots, facing North-East and gently sloping.
- Age of the vines: Planted by Jean-Alfred Ferret in 1955, 1963 and 1964, this plot selection, with an average age of a little over 60 years, is one of the oldest vines on the estate. However, a small plot of 15 ares was replanted in the spring of 2018 after a fallow period of several years. However, this will only join the cuvée in a few years....
- Soil: The deep silty-clayey soil is very chalky, not stony. It comes from clear Dogger marls.
- Vinification : Fermentation and maturing take place in barrels, 20% of which are new, and 80% in barrels of 1 to 3 wines for 10 months. The maturing continues in stainless steel tanks, still with all the lees for another 8 months. On March 18, 2020, in solidarity with the general confinement, the wine left our cellars, permanently housed in a glass hearth.
- Tasting : The discreet nose at first sight opens on an aromatic palette ranging from fresh almond to lime blossom. On the palate the expression is pure and mineral. It is a precise and delicate wine, a little more in finesse on this vintage than it usually reveals itself.
- Food and wine pairing : Scallop ravioli with curry sauce, turbot with hollandaise sauce, Saint-Pierre with Sechuan pepper, chicken with morels, Comté vieux.
