Saint joseph 2020 Cavanos - Yves Cuilleron
Origin: A cuvée produced exclusively from vines located in the commune of Chavanay, in the extreme north of the appellation. Only village of Saint-Joseph on a granite to muscovite soil, it brings out the freshest expression of the Syrah.
Terroirs: muscovite granite.
Grape variety: Syrah.
Cultivation: high-density planting (8,000-10,000 vines per hectare). No insecticides few treatments (depending on weather), small amount of organic-only fertiliser, with respect of soil and vine balance. Vigour and yield control, leaf-thinning and green harvesting to promote grape maturation.
Vinification: manual harvest, plot by plot and traditional vinification. Use as little as possible of oenological products (native yeasts). In the cellar, sorting, crushing and partial de-stemming. Maceration for 3 weeks in open vats.
Maturing: 16 months in barrels. Blending of the parcels before bottling.
Alcohol content: 13% alc./Vol.
Production: approx. 36,500 bottles.
Style: Intense red and black fruit nose, morello cherries and blackcurrant. Delicate notes of noble wood essence make this wine complex. The mouth is well balanced, the texture is velvety and the purity of the terroir gives a beautiful elegance. The tannins are fine and spicy.
Ageing: Drink young on the fruity aromas (3 to 4 years) or on the evolution aromas (between 6 and 10 years).
Food match: Red or white meat of character, beef, lamb.
