Tasted by Joe Czerwinski on January 20, 2022: "The 2020 Saint Joseph l'Olivaie was tasted out of barrel - the final blend will include about 50% Burgundy and 50% demi-muids - has a captivating blend of raspberries and olives, a sexy, silky mouthfeel and great length and freshness on the finish."
VINEYARDS: Syrah
YIELD: 32hl / ha. Grapes from old vines. Very limited yields.
SOIL: Very granitic. Shallow soil.
EXPOSURE: South on steep slopes.
QUALITY : All the viticultural work is done manually. No mechanisation possible. Treatment by hand. Plantation density: 8500 vines/ha. Discontinuous trellising on stakes.
HARVESTING: Manual and transport of the whole harvest in 40 kg containers to our cellars.
VINIFICATION : Sorting on the table at reception. Destemmed harvest. Maceration and fermentation in open vats for 18 days with 2 daily punchings of the cap. Aged for 15 months in barrels, 15% of which are new.
TASTING : Garnet colour of a beautiful intensity with purple reflections. Concentrated nose of red fruits and spices. In the mouth, length and power with tight and silky tannins. This rich and elegant wine would benefit from a few years in the cellar (5 to 7 years).
WINE AND FOOD Pairings: The restaurant l'Amphitryon in Lorient (Morbihan) suggests "small tournedos of hare served with candied quince and endives with ventrêche".
