Château Troplong Mondot 2000
Saint-Émilion - 1st Grand Cru Rated B
96/100 Parker
Cellaring : 2014 - 2034
Tasted in 2010 by Robert Parker: “Extremely young, with an incredible deep purple color, the 2000 Troplong Mondot has hardly changed since I tasted it in 2003. Two recent tastings have confirmed that this is the greatest Troplong Mondot between the profound 1990 and more recent vintages such as 2005, 2008 and 2009. This full-bodied, powerful and massive St.-Emilion displays many aromas of chocolate, graphite, blackberry, blueberry, blackcurrant and ink. Although the tannins are perceptible, they are better integrated than seven years ago, and the fruit, extract and richness clearly outweigh the wine's structure. This 2000 will benefit from an additional 4-5 years of cellaring (longer than I had originally anticipated), and it still has at least two decades of drinking potential ahead of it.”

SERVICE AND TASTING:
When it comes to serving and tasting Château Troplong Mondot, here are some helpful tips:
- Serving temperature: It is recommended to serve this wine between 16 and 18 degrees Celsius. If the wine is too hot, the aromas can be altered, while too low a temperature can mask some of the subtle aromas.
- Aeration: Like most complex red wines, Château Troplong Mondot can benefit from aeration before being tasted. You can let it sit in a carafe for about an hour before serving it. This will allow the wine to open up and release all of its aromas.
- Wine glasses: Use round-shaped wine glasses with a wider opening, which will allow the wine to breathe and concentrate the aromas.
- Food pairings: Château Troplong Mondot is generally accompanied by dishes rich in flavors. It goes well with red meats, stews, aged cheeses and truffle dishes. Feel free to experiment with different combinations to find the one that works best for you.
- Tasting: Take the time to savor each sip. Notice the aromas, flavors and structure of the wine. Take note of the length in the mouth, that is, how long the flavors linger after you swallow the wine.
It is also important to note that Château Troplong Mondot is a wine for laying down, which means that it can continue to develop and improve in bottle for many years. If you plan to keep it, be sure to store it in appropriate conditions, away from light, at a constant temperature and with adequate humidity.
