GROUNDS : very chalky, light and chalky looking, white limestone from Aargau
Geographical situation : very steep plot 22%, located in the upper part of the village. Southern exposure. Altitude 280 meters.

Vine management: Working the soil and treatment with a caterpillar because of the steep slope, reasoned control, partial weeding, leaf removal, manual harvesting.
Vinification : Severe sorting in the vatting house, whole berries destemmed by gravity, enzyming, yeasting, cold pre-fermentation maceration for one week, daily punching of the cap, final hot maceration. Vatting period of 3 weeks. Manual devatting by gravity in the stainless steel pneumatic press.
Ageing: 12 months in oak barrels, 1/3 of which are new, malolactic fermentation in barrels, then blending in stainless steel tanks for 3 months. Light filtration 5 microns before bottling.
Bottling : At the Domaine, great antique tradition bottle, cork stopper.
Tasting : Bright ruby colour, light garnet, its aromas recall violet, redcurrant, cherry; with age, spices, game, cooked prune. Its concentration and complexity are delicately expressed, a precocity that allows it to open quite early. Volnay is often presented as one of the most feminine wines of Burgundy.
Food & wine pairing: Roasted or lacquered game birds, roasted or n civet. Its intensity allows it to go well with strong-flavoured cheeses.
Serving temperature: 14 to 16° C
