Zind-Humbecht Estate

Despite its remarkable earliness (Clos Jebsal is the terroir where the first flowers and first glass berries can be found on the estate), this terroir has a real capacity to produce wines with a cold soil typicity. The grey marls of the Keuper ensure regularity in water, preventing any hydric stress and conferring to the wines of Jebsal a beautiful acidity. Noble rot is present every year, and since the first vintage, all Jebsal wines are soft. Depending on the climate at the end of the season, it is possible that the expression Sélection de Grains Nobles is favoured, especially in years of high acidity, whereas in other, rarer vintages such as 2012, 2004, 1992, we favour a complete harvest in Vendange Tardive. It is also not rare that in certain vintages, Le Jebsal is the only terroir to produce over-ripe wines. In years when the botrytis reaches an extreme concentration and the Grains Nobles exceed the threshold of 30° potential, these wines carry the name "Trie Spéciale", because they are distinguished from the others by a very low acquired alcohol (often less than 6%) and a large quantity of residual sugars (more than 300g/l).
Jebsal wines are discreet in their youth, often marked by smoky and stony aromas. The fruity expression, linked to noble rot, develops during bottle ageing. A minimum ageing of 10 years is often necessary to allow this cru to fully express itself.
