Sweetness index on the palate: 1: technically dry or dry tasting wine.
98/100 James Suckling
How could a dry pinot gris be more radically cool and focused than this mind-blowing wine? The freshness and concentration are equally dangerous. Either you will think this is absurd or it will be a revelation for you. I love the silky texture that makes this so hard to resist in the extremely long, super-subtle finish. Under 13% alcohol. From biodynamically grown grapes.

About the wine & terroir
The history of Pinot Gris (formerly known as Tokayer) at the Windsbuhl site is long-standing; as early as 1759, when the Dukes of Württemberg acquired the property, they noted the grape variety's outstanding success there. A complex, highly mutable variety with naturally subtle aromatics, Pinot Gris requires a great limestone terroir to reveal its full potential. Only such soil can keep yields in check, provide the structure needed for aging, and imbue the wine with true personality. While past vintages—often affected by noble rot—traditionally yielded off-dry or sweet wines, the current climate now allows for the harvest of berries in perfect, pristine condition. This yields structured wines boasting acidity worthy of the finest Rieslings, finishing completely dry—as exemplified by the 2023 vintage. Extended aging on total lees completes the refinement process and enhances the wine's overall harmony.
Tasting Notes (January 2025)
Appearance: Dense pale gold.
Nose: Defined by noble lees aging, the aromatic profile reveals complex reductive notes and hints of grilled, smoky, and toasted elements (achieved without any use of new oak), all in perfect harmony with an undercurrent of white fruit.
Palate: Precise, taut, and fleshy, offering superb length. The imprint of the limestone terroir shines through in noble bitter notes and remarkable mouth-watering acidity, driven by the magnesium-rich Muschelkalk soil. A wine that redefines dry Pinot Gris, placing it among the greatest age-worthy cuvées.
