Harvest date: September 6, 2017 (flower day). Sorting in the vineyard and reception in the winery. Yield: 55 hl/ha
Vinification
Pressing in the pneumatic press in whole bunches for 2 hours 30. Settling of the must: 12 h Fermentation starts in stainless steel tanks and ends in barrels.
Ageing
Duration and type: 16 months and 1 month in stainless steel vats Percentage of new barrels: 25% Burning: medium toast Origin of wood: Cîteaux Number of stirrings: twice a month in fruit day until December. Blending in stainless steel vats one month before bottling. Light bentonite fining. Light filtration.
Bottling : February 4, 2019 (root day) Limited to 3404 bottles.
