Characteristics
This cuvée takes its name from the green clays found in our soils. Our shallow soils consist of highly draining calcareous marl, intersected by a thick vein of green clay—known in soil science as "illite."
During long periods of summer drought, this green clay is the only soil capable of retaining moisture. The fineness and purity of the clay ensure a steady water supply to the grapes, lending the wine its unique character. Parcel selection focuses on the land offering the finest green clay deposits.
Winemaking
Hand-harvested in produce crates
Malolactic fermentation
Food pairings:
Olive oil-based tapas: octopus, croquetas, *pan con tomate* with ham, peppers, *patatas bravas*, *boquerones* (anchovies), prawns with chorizo.
