TERROIR
- The Clos l'Évêque parcels were planted in 1986, with a portion replanted in 2013.
- Total surface area: 2.062 hectares.
- The vines face East/South-East and are located on a plateau with uniform, light, very chalky soil, composed of small pebbles that contribute to water drainage.
VINIFICATION
The grapes are harvested by hand to ensure the best possible quality. The harvest is then sorted by hand and partially or 100% destemmed, depending on the vintage. After filling the vat, a pre-fermentation cold maceration of 4 to 6 days at 10°C helps us extract the color from the skins. Natural fermentation then starts at 24°C, rising to 31°C in its final phase. Phenolic compounds are extracted by pigeage, the intensity and number of which vary according to the quality of the grapes and therefore the vintage. Post-fermentation maceration helps soften the tannins. At devatting, free-run wine and press wine are carefully separated and aged separately. The wine is aged for 15 months in 100% oak barrels, 25% of which are new.
TASTING NOTES
Beautiful light cherry color (typical of Pinot Noir). Fine, delicate nose. It develops notes of undergrowth: humus and fresh red fruit. Lots of finesse and delicacy. Fresh strawberries and cherries. The tannins are fine, delicate and silky.
GASTRONOMY
Enjoy as an aperitif, but also with fresh goat's cheeses such as Rigotte de Condrieu; or with meat dishes "with flavors from elsewhere" such as chicken lacquered with honey and spices.
GARDE
Enjoy now at an ideal temperature of 13-15°C, or keep for 3 to 5 years.
THE ART OF TASTING
It's all too often forgotten that it's not enough to have good wines in the cellar; you also need to know how to serve them. Temperature is an essential element, around 12°C for whites and 15°C for reds; without a good tasting glass to amplify the wine's aromas, you're sure to diminish your pleasure. A good glass gives the wine plenty of aeration and a narrower neck, allowing the nose to better grasp the richness and complexity of the great wine.
