• Tasting notes: "Ripe and seductive, with flavours of creamy melon and yellow apple, enhanced by notes of nectarine, heather, ginger and warm brioche. The long, opulent finish goes beautifully. A hedonistic delight. Drink it until 2022. " - JM

• Grape varieties : ROUSSANNE 100%.

• Harvest/Winemaking: After waiting for optimal ripeness, the grapes were hand-picked on 24th August 2017.

• Terroir : This cuvée is made from our best plot of Roussanne on a grey limestone flinty soil. The grapes are picked by hand, early in the morning to keep freshness, sorted and put in boxes to limit crushing. The bunches are gently pressed in a pneumatic press. The musts are selected and then sent to the stainless steel vat room. After cold settling, the Roussanne grapes are put into barrels for alcoholic fermentation. At the end of the alcoholic fermentation, the malolactic fermentation is stopped. 100% of the volume is matured for 12 months in new barrels.

• Tasting :Pale gold colour with green tinges. The very powerful nose reveals notes of white peach and orange blossom. On the palate, the attack is ample, sustained by an acidity which gives it a good length. To be drunk for more than 20 years at 12°C.

• Food pairing :Enjoy as an aperitif or with a "bourride sétoise".
