VINIFICATION & MATURING

Underground cellar built on gravity for a delicate vinification. Vinification in concrete vats. De-stemming of unripe grapes. Maceration for more than 4 weeks. Gentle extraction. Aged in concrete tulip-shaped vats, in tuns and demi-muids. The wine is not filtered before bottling.

VITICULTURE

Severe disbudding is carried out. Green harvesting is carried out. The harvest is done manually with a rigorous double sorting in the vineyard.

The alchemy of a meticulous blending, this Signature marks a wine with a singular personality, a subtle blend of spices and black fruits, a concentrate of aromas and emotions. "Committed to a culture that always pushes me further to discover the best of the terroir, this cuvée is the one that best characterises the essence of the estate and my personality as a winemaker. We have developed it with the greatest care, taking into account the influence of the environment and the stars on the grapes and the wine. In the vineyard, we use natural fertilisers, harvest by hand and carry out a rigorous selection of grapes. In the cellar, we favour gentle extractions and long, delicate maturation. "

60% Grenache from a parcel at the intersection of "Palestor" and "Bois Dauphin" and a parcel at the intersection of "Grand Pierre", "Rayas" and "Pointu" as well as the "Cabrières" districts, "19% Mourvèdre from "Mascaronnes" and "Boursan" / 13% Syrah from "Le Parc" and "Cabrières" / 6% Cinsault from "Pierre à feu" / 1% Vaccarèse / 1% Other varieties

TERROIR & VINEYARD

Soils characteristic of Châteauneuf-du-Pape (yellow and red sand, red clay and calcareous clay, rolled pebbles) with a high proportion of sand.

Average age of the vines +70 years.

TASTING

This wine has a wonderful concentration. Floral notes abound as do vibrant raspberry and cherry. Rich and chocolatey, it remains fresh and complex with bright but not overpowering flavours.
