Grape varieties: 100% Grenache Noir
The age of the vine : More than 100 years old
Yield : 18 hectolitres/hectare, 3000 bottles, 100 magnums
Agriculture: sustainable
Vinification: The grapes come from the oldest vineyard of the estate, the Grenache, which is more than 100 years old. Located on the western slope of "La Crau" on a colluvium soil mixing rolled pebbles and Safres.
After crushing and partial de-stemming, the grapes are vinified in our cellars using gravity in truncated cone-shaped concrete vats. Maceration for 35 days with gentle extractions allows to obtain the powerful yet supple tannins that are characteristic of our wines.
We have aged this cuvée 60% in concrete vats and 40% in foudre for 18 months.
Food pairing suggestions: Venison in "grand veneur" sauce with blueberry and chestnut confit, duck with wild mushroom sauce, stuffed pigeon, truffled capon, chocolate cake, cherry clafoutis, comté cheese.
Tasting Notes: Full-bodied, elegant and refined, tannic yet velvety, with notes of gooseberry, caramel, cinnamon, cardamom and Szechuan pepper, finishing very long on the palate.
To be drunk now and until 2035. It is recommended to decant it 1 hour before tasting.
