FARMING: Organic viticulture.
PRUNING: Single Guyot.
SOIL CULTIVATION: Carried out entirely by horse (earthing up, un-earthing, and light cultivation of the vine rows throughout the year).
HARVEST: Hand-picked. Rigorous grape selection from the lower part of the plot.
MATURATION: 18 months, 100% in barrels.
BARRELS: 10% new barrels, with annual barrel renewal (+2 per year).
Alcohol: 13.5% vol.
Bottling: Estate-bottled.
