HARVEST
- Date of harvest: 29 September 2016 (Fruit Day) and 30 September 2016 (Root Day)
- Hand-sorted in the vineyard and on arrival in the winery.
- Yield: 27.5 hl/ha
THE VINIFICATION
- 53% of whole grapes, not crushed and vatted by gravity. No yeast addition. Maceration: pre-fermentation, cold (12-15°C) for 5 days. Length of maceration: 22 days. Cap-punched once a day until mid-fermentation and a light pumping-over until the end of the vatting time. Pressing with the vertical press.
MATURING
- Length: 16 months
- Type: in barrels.
- Percentage of new barrels: 35%
- Gentle, slow toasting.
- Origin of the woods: Cher, Tronçais and Citeaux.
- Racking of all barrels.
- No fining, light filtration.
BOTTLING
- February 12, 2018 (fruit day).
- Limited to 3950 bottles, 360 magnums, 60 jeroboams.
